My latest batch of handmade kitchen knives is exactly that — a blend of performance steel, natural beauty, and the kind of craftsmanship I put into every blade that leaves my workshop.

These knives feature 12C27 stainless steel blades paired with curly birch handles that I’ve shaped, sanded, and finished by hand. They’re practical, they’re tough, and they’ve got that warm, organic look you only get from good wood and traditional knife-making techniques.

I’ve used a lot of steels over the years, but Sandvik 12C27 remains one of my favourites for kitchen knives. It offers a great balance of:
